This za’atar bean salad is one of my new favorite bean salad iterations – it’s loaded with goodies (a whole jar of castelvetrano olives and creamy artichokes), plus a fruity and tangy marinade of garlic and za’atar.

Ingredients

Produce
• 1 (13.4 oz or 380 g) can chickpeas
• 1 (14 oz or 400 g) can butter beans
• 3 (15 g) garlic cloves
• 1/2 (85 g) medium red onion, medium
• 7 Artichoke hearts, jarred
• 1 Lemons worth, zest
• 1/2 cup Mint, firmly packed leaves
• 1/2 cup Parsley, firmly packed
• 3 tsp Za'atar
Condiments
• 1 cup Green olives
• 3 tbsp Lemon juice
Baking & Spices
• 1 tsp Kosher salt
• 1 tsp Sumac
Oils & Vinegars
• 3 tbsp Olive oil, extra virgin
Nuts & Seeds
• 1/2 tsp Cumin, ground
