I made this recipe once a week because it is so delicious and so easy to make! As someone who is had anemia, it’s really important for me to have iron rich meals. That’s why I love this spinach pesto, and I pair it with lentil spaghetti to get extra iron and fiber this recipe is completely vegan and gluten-free!
