EDAMAME, CORN & FETA SWEET POTATO BOATS WITH WHIPPED AVOCADO-RICOTTA! It’s the most delicious summer salad served on top of a tender sweet potato & a silky whip! So damn delicious.
Salad:

1 cup cherry tomatoes, chopped
1/2 cup crumbled feta
1/4 cup chopped cilantro
