• Canned and rinsed Black beans
• Frozen Fire roasted corn
• Frozen Rice
• 1/2 can fire roasted tomatoes
Lots of Romaine lettuce
I defrosted the rice and corn, warmed the beans and threw it all together in a bowl. I added some Mexican seasoning (any kind works) and drizzled with a little tahini.
🤜🏻 Now, the key here is mixing the bowl together. You don’t want to eat it without mixing it because it’ll be really bland - those fire roasted tomatoes really add a kick - so mix it up!
