Ingredients:
1/2 cup butter (1 stick)
1 (30-oz) package shredded hash browns
Salt and pepper
1 lb breakfast sausage (bulk)
1/2 green pepper, chopped
1/2 red pepper, chopped
1/2 small onion, diced
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups shredded sharp cheddar cheese
8 large eggs
1 1/3 cups half and half (or milk)
1 tsp seasoned salt
1/2 tsp kosher salt
1/2 tsp black pepper
1/4 tsp dry mustard (optional)
Instructions:
Preheat oven to 400°F. Spread hash browns in a 9x13 dish, drizzle with melted butter, season, and bake for 30-35 minutes.
Brown sausage with peppers and onion. Drain and add on top of potatoes.
Add cheese over sausage mixture.
Whisk eggs, half and half, and seasonings, then pour over casserole.
Bake at 350°F for 35-45 minutes until set.
