The BEST scrambled eggs have a secret ingredient…an extra yolk! It takes them to the next level + it’ll make it harder to overcook.

Pro tip: you’ll need 1 large yolk per every 3-4 eggs. So just adjust if you want to make a large batch.

Ingredients:
 • 3-4 whole eggs.
 • 1 egg yolk.
 • 1 tbsp butter.
 • 1 tbsp crème fraîche.
 • 1 tbsp chives.

•salt/pepper or seasoned salt to taste.

Directions:
 • 1. Add the eggs + extra yolk in a bowl and whisk until nice and airy.
 • 2. Strain eggs into another bowl, trust me…this makes them creamier!
 • 3. Preheat a pan on low for 2 min. Add butter. Once it melts add in eggs.
 • 4. Do not disturb them until the edges start setting then push the edges to the center with a spoon so they all set and cook. Like I do in the video.

Start by adding 1 tbsp vinegar or lemon juice to 4 cups water (optional but egg whites coagulate better in acid conditions). Using a sieve to strain the outer albumen. Carefully transfer egg to a ladle (it’s best to use silicone, if using stainless steel or ceramic lightly grease the ladle or the egg will stick) drop egg into pot of 200 F water, keeping egg in ladle for 4-6 seconds before tilting letting the egg slip off. Turn the heat down. Cook 2-3 min for soft yolk and 3-4 min for cooked yolk. If sensitive to vinegar flavor, rinse poached egg and pat dry before serving.
