I threw together this quick and super easy tutorial to get you roasting up some perfectly tender, sweet and savory beets in no time!

Trim the greens off and clean the beet root thoroughly.  (I like to save the beet greens, clean them really well, chop them up and add them to our kale for the week. Delicious and super nutritious.)

Place the beets in a baking dish, sprinkle with salt, pepper and thyme.  Pour a few tablespoons of red wine vinegar in the bottom of the dish then drizzle with olive oil.  Cover with a lid (or foil) and roast at 375F for 45-60 minutes, until fork tender.

Cut off the stems and trim the ends then chop them up.  Toss in the remaining juices that are in the bottom of the baking dish then serve or store for up to 2 weeks!

This is my go to method for cooking beets to convert any non beet lover!  Ingredients:  • Whole beets  • Olive oil   • Salt  Instructions:  1. Steam beets until very soft and fork tender  2. Ice bath the beets to cool  3. Peel the beets, quarter them and then smash them flat  4.
