Starter
Feed at 1:4:4 (10g starter, 40g flour, 40ml water).
On warm days, use 1:5:5.
Mix in evening, ready by morning.

240ml water (+30ml if needed)
45g honey
60g active starter
300g bread flour
60g oat flakes
6g salt
Extra oats for coating
Bake
Steam: 250°C 20 min → 230°C 15–20 min.
Dutch oven: 250°C w/lid 20 min → 230°C no lid 15–20 min.
