Creamy Beet Salad
A delicious combination of tender beets and creamy cheese, perfect as a side dish or light meal.
Ingredients:
- 4 medium beets (boiled and grated)
- 1/2 cup soft goat cheese (crumbled)
- 1/4 cup plain Greek yogurt
- 1 clove garlic (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Preparation:
1. Boil and grate the beets, then let them cool.
2. In a bowl, mix the Greek yogurt, garlic, salt, and pepper.
3. Fold in the grated beets and goat cheese.
4. Garnish with fresh parsley and serve chilled.
