-2 cups (300g) short-grain rice (e.g sushi rice)
 • WASH/SOAK in water 8h/DRY with a towel and GRIND into flour
 • For stove top:
 • -2/3 cup (155ml) boiling water
 • -a pinch of salt
 • -1 Tbsp corn starch 
 • MIX until it’s a sticky dough/STEAM on the stove for 30mins 
 • For microwave method:
 • -1/2 cup (125ml) boiling water
 • STIR/MICROWAVE 2 minutes
 • -1/4 (50ml) water
 • STIR/MICROWAVE 1,5 minutes
 • ADD a little oil to a working surface/POUND 5-7mins/CUT in 4/ROLL out strings/CUT into cylinders 
 • You can freeze them up to 3 months and use just like store bought rice cakes

Healthy Rice Krispies with a 2 ingredient icing that your kids will LOVE! Make these as a dessert or treat for Thanksgiving, Christmas or just as an after school treat!

Ingredients:

Box (or 5 cups) or brown rice cereal crisps- I used @onedegreeorganics

1 cup of smooth natural peanut butter

1/2 cup of honey

Pinch of salt

Tsp vanilla extract

1 cup melted chocolate chips

1 can Pumpkin puree

Mix together peanut butter and honey and microwave for 30 seconds or until melted and easily stirred. Add in brown rice feral, salt, and vanilla and once well combined, pour into lined pan and refrigerate while you make the icing.

For icing, put one can of pumpkin purée and 1 cup of melted chocolate chips and blend until whipped and top the Rice Krispy treats
