Mom's recipe - turmeric pickle made using raw turmeric, green chili, spices, lemon juice and oil

Ingredients
 • ▢ 10 oz fresh yellow turmeric roots
 • ▢ 2 oz green chilies - 10 long chilies
 • ▢ 2 lemons juiced ¼ cup
 • ▢ 2 tablespoons oil (avocado, mustard, or sesame oil)
 • ▢ 1 tablespoon kosher salt
 • ▢ ½ teaspoon asafetida (hing)
 • ▢ 2 tablespoons split mustard seeds (rai dal)
 • ▢ 1 teaspoon fenugreek seeds

Fresh Turmeric Pickle | Perfect Summer Condiment
RAJASTHANI HALDI KI SABZI (Raw turmeric curry)  A seasonal must that i make every year once the temp drops (a lil bit) here in Mumbai. Loaded with goodness that Haldi brings with it- Antiseptic, anti inflammatory, antioxidant, aids good heart health etc etc…  & the taste - Its phenomenal! Also, DO NOT  get intimidated by the dollops of ghee used in this recipe. This is how it is traditionally made & our body does need essential fatty acids that ghee has. Also, this dish is consumed in modest quantities & has longer shelf life, so if you make it once, it will stay good upto 2 weeks in refrigerator.   Quick recipe-  (For every 250 gms of raw haldi, you will need 1/2 cup ghee). I have used 1/2 kg yellow haldi & 250 gms amba haldi (mango ginger).  In a pan, add ghee & saute grated raw haldi.

This turmeric tea is a great and natural way to fight inflammation and boost your immune system. 

Ingredients
 • 2 cups water
 • 1/2 tsp ground turmeric
 • 1/4 tsp black pepper
 • 2 tbsp lemon juice
 • 2 tsp raw honey 

Step by step instructions
 • In a small saucepan, add the water, ground turmeric, black pepper, and lemon juice, and whisk until well combined. 
 • Heat over high heat and when it starts to boil, turn the heat down to low and simmer for about 10 minutes.
 • Turn off the heat, add the honey, and whisk until combined. 
 • Let the tea cool for about 1 minute.
 • Pour the tea through a strainer into a mug to remove the black pepper.

Ambehaldi Pickle (Wild Turmeric)  Ingredients  • Raw Ambehaldi /Wild Turmeric  1/2 kg  (Grate and Keep)  • Garlic Pods Medium 1 Cup  • Grated Ginger 1/2 Cup  • Vinegar 4 tbsp  • Salt to Taste  • Rai/ Black Mustard Seeds 1tbsp  • Oil 1 Cup  • Hing /Asafoetida 2 tsp  Method:  • Take a Mixing Bowl, add Grated Raw Ambehaldi /Wild Turmeric 1/2 kg, Garlic Pods Medium 1 Cup, Grated Ginger 1/2 Cup, Vinegar 4 tbsp, Salt to Taste, stir well. Transfer this mixture into a Glass Bottle. Keep this mixture in the glass bottle to rest for 3 days. In between open the bottle and mix the mixture with a clean spoon. After 3 days, take Oil 1 Cup in a small vessel, heat oil nicely, add Rai/ Black Mustard Seeds 1tbsp, switch off the gas and add Hing /Asafoetida 2 tsp. Cool Oil nicely and add in the mixture. A

Rajasthani Style Raw Turmeric curry

Jodhpuri Kacchi Haldi ki Sabzi

Quick recipe- 
 • (For every 250 gms of raw haldi, you will need 1/2 cup ghee). 
 • In a pan, add ghee, once it is warm, cumin seeds & heeng. Add 1 bulb of grated ginger, grated raw haldi & sauté. (I have used 1/2 kg yellow haldi & amba haldi). Once it oozes out ghee, add 3 teaspoon of garlic paste. Add 1 teaspoon red chilly powder & coriander powder. Add 1/4 cup curd & salt. Let it simmer for 10-15 mins on low flame until ghee oozes out. You may add some green peas & green chilly if you like at this time. 
 • Turn off the heat & enjoy this delicious seasonal delicacy. Tastes best when served with hot phulkas! ♥️
