Salmon Ceviche

INGREDIENTS
 • ½     pound/200 grams fresh skinless salmon filet, cut into tiny cubes
 • 1      avocado, cut into tiny cubes
 • 1      teaspoon green chili pepper, chopped
 • 1      tablespoon cilantro, chopped
 • 1      tablespoon red onion, chopped
 • 1      tablespoon sesame oil

Topping:
 • Lemon zest
 • 1 tablespoon lemon juice
 • A pinch of coarse salt

1. Mix everything in a bowl, except for the avocado, then add it and mix again.
 • 2. Arrange the ceviche in a ring and add lemon zest.
 • 3. Remove the ring and add the lemon juice and salt.

SALMON AVOCADO CARPACCIO©carolinagelen  10min  4 servings  Ingredients (3-4 servings)  • 1 sushi grade filet, thinly sliced  • 1/2 avocado, thinly sliced  • 1/4 shallot, thinly sliced  • A handful pomegranate seeds  • 1 red chile, thinly sliced  • Fresh cilantro  • Zest of 1 lemon or lime  • Juice of 1/4 to 1/2 lemon or lime  • A glug virgin olive oil  • Salt and pepper  Instructions  Layer the salmon and avocado on a serving plate. Salmon Mango Ceviche with Crispy Rice Paper 🫶🏻 no, not traditional by any means (Mexican or Peruvian) but technically ceviche means marinated raw fish so…

Ingredients:
 • 8 oz sushi grade salmon (small chop).
 • 2 ataulfo mangos (small cube).
 • 2-3 persian cucumbers (small chop).
 • 1/4 red onion (thinly sliced).
 • 1-2 serranos (thinly sliced).
 • 3 scallions (green part, chopped).
 • cilantro to taste.
 • 1 tbsp black sesame seeds.
 • 1 tbsp toasted sesame seeds.
 • 2 large lemons (juice).
 • 2 tsp sesame oil.
 • 1/3 cup light coconut milk.
 • 1 tbsp tamari or soy sauce.
 • 1/2 tsp fish sauce.
 • 6-8 rice paper wrappers.
 • avocado oil.

•salt & pepper to taste.

Directions:
 • 1. Mix the coconut milk, sesame oil, lemon zest and juice, fish sauce and tamari.
