While gluten isn't inherently bad, in my experience as a registered dietitian and former IBS-sufferer, I do find a significant amount of people with IBS feel better on a gluten-free diet.
The kicker? It's not always about the gluten, and the symptoms aren't always caused by IBS.
-Some people with IBS may have an intolerance to the fructans (type of FODMAP) in wheat (a food source of gluten), while others who think they have IBS actually have undiagnosed celiac disease.  
-Some people have a food sensitivity to wheat.  
-Many with leaky gut may also find that gliadin (a protein in the gluten) is what makes them feel worse, since it increases gut permeability.

1/2 cup (1 stick; 113 g) unsalted butter, cut into pieces

1/2 cup (73 g) low FODMAP, gluten-free all-purpose flour

1 ¼ teaspoon dry, powdered mustard

1 teaspoon kosher salt
