Ingredients: 
 • 1 brown onion
 • diced 3 garlic cloves
 • crushed 2 tbsp tomato paste
 • 1-2 tsp ground coriander
 • 1 tbsp ground cumin
 • 1/2 tsp dried parsley
 • 1 tsp garlic powder
 • 1/2 tsp ground chili
 • Salt to taste
 • 400g can diced or cherry tomatoes
 • 1 cup quinoa, uncooked and rinsed
 • 500ml vegetable stock or water
 • 425g can black beans, rinsed (add 2 cans for extra protein)
 • 1/2 lemon, juiced

1. Add oil to a pot and sauté the onion and garlic over medium heat until lightly browned. 

2. Add in the tomato paste and spices, cook until fragrant then stir through the canned tomatoes 

3. Add the uncooked quinoa and stock. Stir and bring to boil. Place on the lid and reduce heat, simmering until liquid is absorbed and quinoa is cooked (roughly 12-15 minutes).
