COOKIE BAKED OATMEAL!

Ingredients

* 1/2 cup oats

* 1/2 banana (the spottier the better!)

* 1 egg

* 1/4 cup milk of choice (I used oat milk)

* 1 tbsp sweetener (optional- today I used coconut sugar)

* Pinch of salt

* 1/4 tsp baking soda

* Chocolate chips

How to

* add all ingredients (except chocolate chips) to a blender and blend until fully combined

* pour batter into an oven-safe baking dish

* top with chocolate chips

* bake at 350F for 20-25 ish minutes

I wanted to make this banana pecan & they were so so so good but you can top them with or add in whatever you like!

Makes 6 cups:

Ingredients:
 • 2 cups organic old fashioned oats
 • 2 super ripe spotty bananas
 • 1 1/2 cups plant milk (more as needed)
 • 2 tbsp maple syrup, monk fruit, or coconut sugar
 • 1/4 cup almond butter (or other nut butter)
 • 2 tbsp ground flax seed
 • 3 tbsp of your fave protein powder (can omit)
 • 1 tsp cinnamon (optional)
 • 1 tsp vanilla
 • 1 tsp baking powder

Instructions:
 • Mash the banana really well, then add in the remaining ingredients. If using protein powder, you may want to add an extra tbsp or two of milk if your mixture is SUPER thick. Divide amongst cupcake liners. Top with pecans and chocolate chips. Bake at 375f for 28-35 mins (i
