This date caramel is soooo moreish and can be used as a refined sugar free sweetener for oats, chia puds, in baking, coated in chocolate for a treat or even by the spoonful. 

I used @colessupermarkets Royal Dates - I’d never tried them before but they were delicious! Sweet and plump like medjool but maybe a touch less syrupy but about half the price per kilo. Was super happy with the finished result. I’ve also tried date caramel with dried pitted dates and it also works well, you just have to soak them for a lot longer and the colour comes out a lot darker. Still super tasty. So you can really use any dates and get a great result!!

Ingredients: 15-20 Medjool dates, pitted & halved I 1 cup (240g) peanut butter I ½ cup (75g) chopped almonds I 1 cup (175g) dark chocolate chips or chunks 1 tbsp coconut oil (optional)  1️⃣ Prepare the base: Line an 8x8-inch tray with parchment paper & arrange dates cut-side down. 2️⃣ Add peanut butter & almonds: Spread peanut butter evenly over the dates & sprinkle almonds on top. 3️⃣ Make the chocolate topping: Melt chocolate (with coconut oil if using) & pour over the layers.
