Bagel Ingredients: 
 • 100g Sourdough Discard 
 • 500g Bread Flour 
 • 250g Warm Water 
 • Pinch of Instant Yeast 
 • 30g Sugar 
 • 10g Salt 

Boiling
 • 2 Liters Water
 • 40g Honey 

Seasoning: 
 • Egg Wash 
 • Everything but the Bagel Seasoning 
 • Sesame Seeds 

Form a shaggy dough using all your bagel ingredients. Rest the dough for 15 minutes. Knead the dough for 10 minutes until smooth and non-sticky. Allow the dough to rise until it doubles in size (overnight). Divide the dough into equal parts (about 80g each). Shape each dough into a ball. Gently poke a hole in the middle and stretch to form a bagel shape. Place each bagel on a baking sheet, cover, and let rise. Bring a pot of water and honey to a boil. Carefully, boil the bagel 30-60 seconds on each side.
