baklava inspired stuffed dates ! I swear my legs walk themselves to the freezer for these babiessss 🔥 I always try & pair a sweet treat with healthy fats & a bit of protein to keep things more balanced & these are so frkn delishhh 👏

I wanted to drizzle these with some white chocolate but didn’t have any, so I did regular to make them prettiest & actually loved it - but totally optional!

Makes 6-7 stuffed dates. These can be kept in the freezer for awhileeee but I wouldn’t know how long because they’re always annihilated here 😅

6-7 pitted medjool dates (make sure they’re soft!)
• 1/3 cup mixed, chopped walnuts + pistachios
• 1 tsp each orange juice + zest
• 2 tsp maple syrup or honey (optional)
• 1/2 tsp cinnamon + pinch of cardamom (optional)
• 1/2 tsp vani

• 8 medjool dates
• 8 pecans
• 4–6 tbsp vegan salted caramel (depending how much you can fit in the date)
• 2 tbsp dark pistachios chunks
• vegan dark chocolate for topping

Instructions
• Use a knife and make a cut down one side of your date lengthwise. Then use your fingers to gently pull out the pit.
• stuff in the pecan
• Take a spoon of salted carame and add it to the center of the date, where you just added the he pecan.
• Top with pistachios
• then top with chocolate melted dark chocolate and sea salt if you want .
• Freeze for 5 minutes just to make it firm and enjoy
