Spicy Ahi (Tuna) Poke Wonton made with Ahi steak, sriracha sauce, kewpie Mayo, tobiko & baked wonton wrappers

This is what you need:
 • * Sushi-grade ahi tuna
 • * Kewpie Japanese Mayo
 • * Sriracha Sauce
 • * Sesame oil
 • * Tobiko (mix & topping)
 • * Furikake (topping)
 • * Green onion (garnish)

* Wonton wrappers (bake 350F for 8 minutes in muffin cups pan)

Ahi Wonton Tostadas, Ginger Gochujang Mayo & Fried Leeks.

Ingredients:
 • 8 oz ahi tuna.
 • 9 wonton wrappers.
 • 1/3 cup + 2 tbsp japanese mayo.
 • 2 tbsp gochujang.
 • 1 tsp fresh ginger.
 • 1 lime.
 • 3 tbsp tamari.
 • 1 tsp rice vinegar.
 • 1.5 tsp sesame oil.
 • 1 leek (washed and thinly sliced).
 • avocado slices.
 • sesame seeds.
 • scallions.
 • 2-3 mini cucumbers (thinly sliced).

•jalapeno slices.

Directions:
 • 1. Make an x on some wonton wrapper so they don’t puff up. Spray some avocado oil and bake at 350F for 8-10 min.
 • 2. Slice the leeks really thin, add to a pan and cover in avocado oil. Cook on high for 2 min and lower heat to medium low until golden. About 5-7 min. Let rest over a paper towel.

Ingredients: 30 wonton wrappers, cut into triangles Oil, for frying  1/2- 1lb imitation crab or sushi-grade fish 1 cup white rice  1 tablespoon low-sodium soy sauce ½ cup cucumbers, chopped 1 avocado, diced 2 tablespoons sriracha mayo (to taste) 2 tablespoons (wasabi sauce) 1-2 teaspoons Furikake flakes, for topping  Directions: Heat about 2-inches of cooking oil in a small saucepan to 350ºF. Fry the wonton wrappers in batches of 5-7 until golden and crispy - about 30-45 seconds. Add to paper towel liner plate and cool. Place the wonton chips on a platter or on individual plates followed up by the prepared rice. Top with the crab or whatever fish you like. Add avocados, and cucumbers. Finish with sriracha mayo, wasabi sauce, and soy sauce, if desired. Sprinkle with furikake and enjoy!
