Sourdough acts as a binder and will fill the void of not having eggs.   To replace two eggs in your baked goods, like these cookies, simply add 1/2 cup or approximately 125g of sourdough starter.   Mix and continue on.   Now I do suggest that you let your dough ferment to truly harness the power of sourdough but you do you boo.   Happy baking!
