Tomato Risotto...truly my idea of comfort food…Am I claiming this is the authentic way to make risotto? No...but it is a very good way! ❤️
Tips: You can use any regular vegetable or chicken broth but making the one I’m sharing just adds another layer of tomato-ness. Risotto isn't hard but it requires attention, make sure your broth is piping hot as you add it in and mix regularly...you can't walk away from it. Make sure the butter is cold when you add it in & always salt at the end!
Ingredients:
• 1 1/4 cup vialone nano rice.
• 4.5-5 cups tomato vegetable stock (recipe at the bottom).
• 3 tbsp tomato paste.
• 1/2 sweet onion (chopped)
• 1 shallot (chopped).
• 2 garlic cloves (minced)
• 3 tbsp high quality butter.
• 1/2 cup white wine (I used sauvignon blanc)
