Fix heredoc bug in gcc_init.sh and add .gitignore

- Fix: $(date) was not interpolating inside single-quoted heredoc in
  commit.md generation. Extracted to variable before heredoc block.
- Add .gitignore excluding .GCC/ directory, ROADMAP.md, and OS/editor files
