Updating the guzzle version to 7.0.x to be compatible with Laravel 8 version

Thanks very much! We use OpenAPI Generator to generate the PHP client, but I will see if I can incorporation this change in there and release a new version to allow |

Hey, @ndbroadbent We use Guzzle 7.0.x too. Are you planning to merge this PR soon? Otherwise we'll also be forced to downgrade to Guzzle 6.0.x |
